Zuma: One Kitchen Concept, Nineteen Cities
Founded in London's Knightsbridge in 2002 by chef Rainer Becker, Zuma built its identity around three open kitchens — main kitchen, sushi counter, robata grill — and has carried that exact format into nearly every permanent location since. This is a restaurant, bar, and lounge experience, not a beach club, and it belongs in the dining-and-nightlife layer of the experiences series rather than alongside Nammos or Scorpios.
Standalone Flagships
London (Knightsbridge, 2002) is the original. Miami (2010) sits on the Miami River in Downtown Miami, inside the Kimpton EPIC Hotel, with an outdoor terrace overlooking passing yachts. Las Vegas (2017) leans into Strip energy with a natural-stone feature wall and a martini bar built inside the main bar. New York (2015) occupies Midtown Manhattan.
Hotel-Embedded Locations
Boston (2019) operates inside the Four Seasons Hotel One Dalton Street. Vail (2026) is newly opened inside The Sebastian - Vail. St. Tropez (2025) took over a garden setting at the legendary Byblos Hotel, with a central bar built from glazed Japanese ceramics and carbonized bamboo. Dubai (2008) and Abu Dhabi (2014) both operate as hotel-anchored destinations in their respective luxury towers.
Global Footprint
Beyond the above, Zuma runs permanent rooms in Hong Kong, Istanbul, Bangkok, Rome, Madrid, Doha, the Maldives, Riyadh, and Cannes — 19 permanent locations in total, plus seasonal pop-ups that have appeared in Ibiza, Mykonos, Porto Cervo, Capri, Bodrum, and the Datça Peninsula. The seasonal locations are worth tracking specifically because they overlap directly with our destination guides — a Zuma pop-up in Ibiza or Mykonos is a dining anchor for a night out already built around one of our beach club or nightlife pieces.
What This Means for the Series
Zuma is the connective tissue across nearly every major destination in this series — Vegas, Miami, St Tropez, and the Ibiza/Mykonos seasonal circuit all get a Zuma night worth planning around.
